Have you ever had those days where all of sudden it is 2:30 in the afternoon, you’re starving because you ran out the door and had no time to eat breakfast, and then after the grouchiness sets in, you realize that you have no thoughts for dinner? Shew me, too, sis! Lucky for you, you’ve come to the right place!

Here are some of my quick and easy go-to meals for breakfast, lunch, and dinner that will save you time and save you from hangry behavior.
Breakfast
- Overnight Oats: We’ve all heard of these and I know what you’re thinking… “Ugh let’s be original, Olivia.” Hear me out! Prepping these one night earlier in the week can set you up for success for the week! Here’s what I do. I use the same base recipe each time, and then I just add different things to change it up. You can always add in any source of protein or flavor that you like. Here are my top two!
- Strawberry cheesecake: 1/4 cup oats, 1/4 cup of milk (whichever you prefer), 2 tbsp of sugar free cheesecake pudding mix, 1 tbsp of honey, 3-4 chopped strawberries.
- Peanut butter banana: 1/4 cup oats, 1/4 cup of milk, 2-3 tbsp of PB protein powder, 1 tbsp of honey, 1 banana cut up (can also add cocoa powder or chocolate protein powder).
- Protein on the Go: Another original idea, you ask? This is actually my most frequent breakfast routine. The mornings are usually a rush for me, especially mornings that I go to the gym. So I opt for Core Elite chocolate protein. These have 42 grams of protein and keeps me full until lunch. If I’m not drinking my protein, then chances are I’m eating it in ONE bar. These are usually around 20 grams of protein but are delicious! Whichever one I don’t have for breakfast, I’ll usually have for lunch. Speaking of…
Lunch
If I’m not having a protein shake or bar, my favorite go to is cottage cheese. Before you freak out, remember you’ve trusted me this far. I’ve always hated cottage cheese until I came across a TikTok trend about the Tiffany Plate. Don’t worry, I’m not about to tell you that I tried the trend and you should, too. But it did inspire this idea! I mix cottage cheese (Good Culture is my favorite brand) with buffalo sauce (Kinder’s buttery buffalo is chef’s kiss). It’s definitely buffalo chicken dip vibes! I rotate something crunchy to eat with it but my heavy hitters are: rye chips, pretzels, celery, or carrots. Trust me!
Dinner
I can’t lie to you… my husband usually always cooks dinner. So whenever he has a work emergency or can’t do it, I need something quick, easy, but also good! Here is one of my favorites!

- Beef Tips in the InstaPot (dump and go): 3 lbs stew meat, 1 diced onion, 2 heaping tbsp of minced garlic, 1 packet ranch seasoning, 1 brown gravy packet, 2 cups beef broth. Quick mix, cover, cook on low for 6-8 hours (while you’re at work) or on high for 4 hours. Really yummy over instant rice!
